3. Fermentation process

Mainly, the wort is introduced into the fermentation tank for further fermentation, the temperature is controlled, and the yeast is in the best physiological state. During this process, the yeast converts maltose into carbon dioxide and alcohol. Fermentation takes place over eight hours at an accelerated rate, accumulating a dense foam called ‘wrinkle’. After the yeast has fermented all the fermentable material in the wort, it begins to form a thick sediment at the bottom of the vessel. As the temperature gradually decreased, the fermentation was completely finished after 8 to 10 days. During the whole process, strict control of temperature and pressure is required. Of course, different beers and different production processes lead to different fermentation times. Typically, the fermentation process takes about 6 days for lager beer and about 5 days for pale lager. After fermentation, most of the yeast settles at the bottom of the tank. 4.the packaging process
