1. Wort ingredients. The wort contains sufficient base acids and fermentable carbohydrates, because only a small amount of alcohol is produced through the synthesis system [the base acid content in the wort should be controlled at (18±2) mg/L. The ratio of excipients is too large, and too much sucrose is added, which often leads to the lack of a group in the wheat meter, resulting in the increase of alcohol.
2. The amount of yeast added. It is appropriate to take (1.5~1.8)×17 pieces/mL. When the inoculation amount is high, the newly proliferated yeast cells are relatively small, which is beneficial to reduce the formation of alcohol; if the yeast cells multiply, it is easy to form more alcohol. In actual production, the proliferation number of yeast is generally controlled within 4.
3. Fermentation method. Using combined tank fermentation (main fermentation uses conical tank fermentation, and post-fermentation is carried out in traditional fermentation tanks), the total amount of alcohol increases by 2~25 compared with ordinary fermentation methods. No matter what method is adopted, all measures to accelerate the main fermentation will increase the alcohol content.
4. Fermentation temperature. Excessive dissolved oxygen in the wort and high temperature fermentation both promote the reproduction of yeast, and also increase the production of alcohol accordingly, so the process measures of low temperature main fermentation and high temperature reduction can be adopted. Pressurized fermentation is also beneficial in reducing alcohol formation.
